Savory Quinoa Breakfast

INGREDIENTS

1 TBSP Ghee

1 Cinnamon Stick (1 inch)

Green Cardamon pods

3 Cloves

1 tsp Shroto Shudhi Masala

1 Cup Quinoa

1/2 Cup Shredded Carrot

1/2 tsp Soma Salt

3 Cups Water

1/2 Lime

Chopped Cilantro

DIRECTIONS

  • Melt Ghee in saucepan over medium heat.
  • Add Cinnamon stick, Green Cardamom pods, cloves and masala. Toast until fragrant.
  • Stir in Carrots and Quinoa until coated.
  • Add Water and Salt.
  • Allow to simmer until Quinoa is fully cooked.
  • Allow to cool to eating temperature. Add Lime and Cilantro to taste.
  • Serve warm.

NOTES:

I love the look of rainbow quinoa in this dish, just make sure all varieties of quinoa are fully cooked.
